Peppermaster's Focaccia Bread

Instructions
Flour & water mix
  1. Mix the flour and water together in a large bowl by hand or with a dough hook in a mixer. Cover and set aside. I cover the bowl with a damp cloth and set it aside.

  1. Mix the water, yeast and sugar together and watch it until it becomes foamy. (About five minutes.

  1. Mix the yeast mix into the Flour and water mix and once well incorporated, then add the salt. Beat this for five minutes with the dough hook or a little longer by hand.

  1. In the new bowl, completely and generously coated with olive oil, transfer the dough mix from step one. Cover the bread with a damp cloth and set aside in a warm place to rise for 2-3 hours.
Focaccia
  1. After 2-3 hours rising, take a sided conventional baking sheet, appr. 12 x 13. Generously oil the pan with extra-virgin olive oil. Use your fingers to ensure the oil gets everywhere in the pan.
  2. Take the Bread mix from step two and fold it over two to three times to deflate it. Then transfer it to the baking pan. With well oiled hands, stretch the dough to the size of the baking pan. Take care not to tear the dough as you are stretching it, use a press and push sort of a motion rather than pulling on the dough. Once you've finished spreading it out, oil your hands again, patting the top of the surface of the dough so that it is completely oiled. Cover it with plastic wrap and set in the fridge and allow to sit there as long as you can (4-24 hours).
  3. About 30 to 45 minutes before you are ready to decorate and bake your focaccia, take it out of the fridge and let the pan sit in a warm spot until it gets puffed and bubbly.
  4. Preheat your oven to 450
  5. Decorate the focaccia. I use herbs like basil, and cherry tomatoes, some varietal chilli peppers, the prettier the better.
  6. Bake for 25-35 minutes until the bread is a deep golden brown. Once baked, remove it from the oven and allow it to sit for ten minutes, slide a metal spatula under the bread (in case it is stuck to the pan) and transfer the bread to a metal rack to cool.
