The secret to good cornbread is to mix it just enough to blend the ingredients together. A light hand is always best.
Serve this with (among other things), our Easy Curried Goat
Mix vegetables and dry ingredients together.
Make a well in the above ingredients to add the wet ingredients to.
Add in the rest of the ingredients and stir as little as possible.
Pour into greased muffin tins or a square 8 inch pan
Bake for about 20 minutes until golden brown.
