Instructions
Directions for Marinating fish
  1. Cut the fish into pieces 1 inch cubed x 3-4 inches long
  2. Toss the Peppermaster Goatpepper Mash with the fish, cover and refrigerate 1-3 hours
Directions for Assembly
  1. Line up your preparations in the following order:
  2. One small baking pan (9-10 inches square) with a blend of 2 cups of corn flour and 1/2 tsp Peppermaster Fire Salt
  3. One bowl with Egg wash
  4. Another baking pan with a blend of 2 cups of corn flour and 2 Tbsp Peppermaster Chef’s Steak Spice
  5. A drying rack
  6. One piece at a time, gently select the fish with the egg coating, place it in the first pan with the salted corn flour, covering completely with the corn flour and patting it into the fish
  7. Dip the coated fish in the egg bath and then put it into the spiced corn flour
  8. Fully coat and then remove to drying rack and let sit for 1-5 minutes while waiting for your pan to come to temperature
  9. The fish fingers can be pan fried in 1/4 inch oil and butter mixture or in a deep fryer
  10. Heat oil to 350 degrees and cook until golden brown, 3-5 minutes, If in a pan, turn after about 2 minutes
  11. Remove from fryer and dish onto absorbent paper to absorb any excess oil
  12. Serve immediately
